It's a sad day for bagel lovers of metro Phoenix: One of the Valley's locally-owned bakeries has shuttered its doors.
Located in a strip mall in Ahwatukee Foothills, Odelay Bagel Co. offered a variety of house-made bagels and schmears. The closure announcement came via Facebook and Instagram posts on Dec. 4.
Owner Ryan Probst, who previously worked for Jonathan Robins Bakery in Tempe, started Odelay Bagel Company in 2015 with the quest to make the perfect bagel. Just a year later, Phoenix New Times recognized his business for having the best bagel in town.
The secret to making the 'perfect bagel'
The key to a perfect bagel is an oft-forgotten ingredient, Probst said: time.
"You can't make something good, fast — at least not bread," Probst said.
To make his bagels it took 24 hours. He and his team made the dough from scratch with only 5 base ingredients: flour, water, salt, honey and yeast. They worked the dough by hand, boiling the dough rounds in malted water before baking them.
Making good bread is an exercise in patience and the process can't be rushed, Probst explained.

Will Odelay Bagel reopen?
Over the years Odelay Bagel Co. served many transplants from New York and New Jersey who came in just for the bagels, he said.
But the "love and support" from the community in Ahwatukee Foothills, as well as visitors who came from all over the Valley, wasn't enough to keep the business financially sustainable, Probst said.

This might not be the end for Odelay Bagel Co., however. While fans shouldn't expect a reopening anytime soon, Probst is eyeing several opportunities to reopen in Tempe.
