CLEVELAND, Ohio - Brandon Chrostowski's latest installment in Edwins' Buckeye neighborhood culinary plan - a bakery-coffee shop-diner - is scheduled to open Friday, Dec. 20.

The final hurdle, health-department approval, was cleared Tuesday, Dec. 10, opening the door for the ovens to begin churning out pastries and breads, from macaroons to lemon bars and more. The breakfast menu will include corned beef hash with a poached egg, pancakes, French toast, and sweet and savory crepes. Coffee options will go beyond typical diner offerings, with espresso, latte, cappuccino, mocha and tea.
"We're ready to roll," Chrostowski said.
The culinary enclave covers 2,900 square feet and will employ a half dozen full-time workers and several part-time workers. Kurt Zoss, formerly of Zoss the Swiss Baker, is offering his baking tutelage for the employees.
It's really a three-in-one concept: If you're out front looking in from Buckeye Road, to the left is an 800-square-foot library area to drink coffee and eat a pastry. In the middle is where you buy pastries, have your coffee poured and can see display cases with breads in the background. And on the far right is the diner, where all the baking and production takes place.
The complex is part of the larger learning and living center campus where folks study, learn, relax and live. They are the force behind all of the Edwins properties - the adjacent butcher shop and the fine-dining restaurant nearby in Shaker Square. Chrostowski's vision of employing recently released incarcerated individuals is well known; the bakery-diner-coffee shop is simply the latest extension of that.
"It doesn’t get old," Chrostowski said as the opening neared. "But this one is bigger, only because it's essentially three storefronts that are giving something this neighborhood hasn’t seen on this level in a long time."
Ever since Dewey's closed in Shaker Square on May 31, "there's no place to comingle and hang out" in the neighborhood, Chrostowski said.
"This one sews a lot of loose ends up," he said. "It feels great walking through the spaces."
The bakery - which has partnered with Uber Eats - is at 13106 Buckeye Road, Cleveland, 216-675-0896. Through the holidays, Edwins Bakery & Training Center will remain open seven days a week with a special schedule. In the future, hours will be as follows:
Bakery - 7 a.m.-5 p.m. Tuesday-Friday, 8 a.m.-4 p.m. Saturday, 10 a.m.-1:30 p.m. Sunday.
Diner - 7 a.m.-11 a.m. Tuesday-Friday, 8 a.m.-11 a.m. Saturday, 10 a.m.-1:30 p.m. Sunday.
