Hastings bakery puts passion and tradition in holiday treats - KSNB Local 4

HASTINGS, Neb. (KSNB) - With the holiday season ramping up, one Hastings bakery is working to meet the demand for their special orders and they are adding their own traditions in with it. For some, they want to make that Christmas pie all on their own. But others who don't have time or always seem to burn the cookies look to Back Alley Bakery to help them make their holiday sweet.

Starting at four a.m. the bakery comes to life. Bakers get to work making the day's bread, cinnamon rolls, and other sweet treats. Around the holidays they are inundated with orders people need for their holiday celebrations. The bakery prides themselves on not just pumping out products, but rather putting in the time in each step of the process.

“We have a lot of customers that are daily, yearly, and all they do is just brag about how delicious it is and they can't match up to it,” Pastry Baker Victoria Forbis said.

From lemon bars to pickle cupcakes, the recipes come from family favorites or are experiments. Forbis said people stop her on the street to tell her how much her creations mean to them. She said she was inspired to bake by her grandma that would make goodies for a boys home.

“When I went in with her for a holiday all you could see was all the children happy that she was there and they loved her bread and her baking goods and it just kind of escalated from there,” Forbis said.

When they hand over the orders, Forbis said seeing people's eyes light up is what makes all the chaos worth it. Some are regulars and have made the bakery part of their own holiday traditions.

“Finding someone that you know what they're going to get to drink, usually know what they're going to get to eat. I think they find that fun because then they feel like you know them and it makes them want to come back more,” Waitress Lillian Smith said.

So in the back of the bakery you will find bakers hard at work putting their passions on a plate for the holidays. Back Alley Bakery uses local ingredients and do what they can to be sustainable.Most of all they like to have that neighborhood charm to those who walk in their doors.
