Rosita’s Bakery maintains tradition in Fort Morgan - Fort Morgan Times

Rosita’s Bakery has been a Fort Morgan staple for nearly two decades, keeping a family tradition of Mexican pastries alive generations down the line.

In honor of the bakery’s years of providing for the community, the city named Rosita’s Bakery its “Business of the Month” for February during a regular Fort Morgan City Council meeting on Feb. 4. Owner Cynthia Carranza said she’s seen the “Business of the Month” sign in front of other storefronts this past year and was hoping to be chosen soon.

“We’re very happy; we’re excited about it,” Cynthia Carranza said. “People will come by and congratulate us about being Business of the Month, so we’re very happy.”

Cynthia Carranza and her husband Alfredo have owned and operated the local bakery since moving to Fort Morgan from California in 2002. They specialize in traditional Mexican pastries, honoring Alfredo’s family history of bakers in Mexico. His grandfather, uncles and brother all followed the same calling in their careers as pastry chefs and bakery owners.

Rosita’s offers doughnuts, cakes and puff pastries along with more traditional fare such as tres leches cake and other breakfast food during weekday mornings. Cynthia said the breakfast rush is a familiar crowd or regulars and local families, many who’ve been coming to Rosita’s most mornings for years. They’re open at 7 a.m. everyday except Mondays.

“Everything that we make, you know we do it with love, and we really like it,” Cynthia said. “We like what we’re doing. Everything here, all the bread, we make it and we bake it here.”

On weekdays, Alfredo is in the shop by 5:30 a.m. to start preparing that day’s fresh-baked goods. Cynthia said he arrives much earlier on the weekends, closer to 3:30 a.m., to account for the larger crowds and expanded menu. On Saturdays and Sundays, Rosita’s sells to-go orders of carnitas, tamales, barbacoa and other Mexican dishes.

Cynthia said the bakery’s most popular pastries in the morning are its traditional Mexican “conchas,” a baked sweet bread in the shape of a shell. She and Alfredo make around 270 conchas every day during the week, and more on weekends.

Alfredo and a couple of the shop’s four employees make most of the pastries and breakfast foods, while Cynthia and another employee bake many of Rosita’s cakes. She said she enjoys decorating cakes for special occasions like weddings or a quinceañera. Cynthia said the bakery gets busier with specialty cake requests when that season picks up around March.

She said she typically makes around 40 cakes each week, including weekends. When customers aren’t filing in and out for their morning coffee and pastries, the Rosita’s kitchen is busy with preparation for the weekend or next day’s breakfast.

Sarah Crosthwaite, city Economic Development Specialist, presented Alfredo and Cynthia with the “Business of the Month” title for February during the month’s first city council meeting this past week. Crosthwaite said the city began the program in May 2019 to highlight local businesses with a community impact such as Rosita’s Bakery.

“It’s aimed at promoting the small businesses here in Fort Morgan that have such an impact on job creation and other quality of life features that make Fort Morgan so unique,” Crosthwaite said.

As part of the “Business of the Month” program, the city will pay for a month’s worth of local advertising for Rosita’s Bakery. The city, Fort Morgan Area Chamber of Commerce and The Fort Morgan Times honor local establishments with the award highlighting small businesses in town each month.

Rosita’s Bakery is located at 211 Main Street in Fort Morgan, and is open from 7 a.m. to 7:45 p.m. on weekdays; and from 7 a.m. to 5:45 p.m. on Sundays. Rosita’s is closed on Mondays.
