Chaparro opened Paola’s Pastries in May 2017 and has catered to her customers’ sweet tooths since then, by serving treats, such as PB&J cupcakes. A slow year in 2019 caused Chaparro to re-evaluate her business model by focusing on custom orders for her goods instead of keeping her shop open for walk-in traffic.
“I will be taking care of customers that will come and pick up,” she said. “If anybody wants to do a tasting or come check something out, I’ll be gladly opening the doors for anybody that needs to.”
Winter weather was one of the reasons Chaparro gave for making the change.
“Well, wintertime is a slow season for foot traffic anyway, but usually we make up with the large foot traffic that you get during the summer,” Chaparro told the Herald in a phone call. “Unfortunately, in 2019, it was a little lower than usual.”
Chaparro made the announcement that her business was changing in a Jan. 6 Facebook post, where she mentioned “significantly lower foot traffic,” to the point she could no longer afford to pay her two part-time and one full-time employees. As a result, Chaparro is no longer able to bake the quantity of different pastries that would be needed for a walk-in business.
Chaparro admitted that the change has been “nerve-wracking,” but focusing on custom orders is a way to keep her shop in the public eye.
“The good thing is that custom orders are what I am most known about and what I know how to do,” she said. “Hopefully, it will still showcase what I do, that people won’t forget that we’re here.”
She told the Herald she was responsible for most of the artistic work at Paola’s Pastries, and that is what she will focus on moving forward.
“I’m going to try handle as much as I can by myself,” she said. “For the most part anyway, the cake decorating was mostly me, and all the fondant work was still me.”
Chaparro said she would like to be open for walk-in business again, but that depends on how this year goes.
“If I do well enough for the summer, hopefully, it can be open every day,” Chaparro said.
